Harvest Power Salad

Full of foods for energy and health

I recently gave a talk about "power foods" and my top 5 power foods were 1. beans/lentils, 2. nuts/seeds, 3. vegetables. 4. lean protein and 5. whole grains. This includes all of those foods into one bowl. Beans and lentils are great for heart health because they are high in soluble fiber. They are also a great source of lean protein. Nuts- pecans in this particular recipe, provide some healthy fat along with vitamin E, b vitamins, magnesium, and more.  Leafy greens and broccoli are high in vitamins C, K and A along with fiber. The different components hold well too so you can have everything prepped and then combine the ingredients together for several lunches or dinners. Enjoy!

 

Ingredients

8 cups spring lettuce mix

1 cup broccoli, cut into bite size pieces

1 cup farro

1 can garbanozo beans, drained and rinsed

1 apple, chopped

1 oz pecans, chopped

2 oz parmesean cheese from a block (not shredded)

Dressing:

2 tbsp Dijon mustard

1/2 cup olive oil

1/4 cup apple cider vinegar

salt & pepper to taste

Instructions

  1. Combine farro with 2 cups of water, bring to a boil and cook for 15-20 minutes until tender
  2. Combine mustard, olive oil and vinegar in a jar or bowl and wisk or shake jar vigorously to combine. Season with salt and pepper
  3. Once farro is cooked, add broccoli to pot and stir together so the broccoli steams and softens
  4. Divide lettuce between 4 bowls, add ½ cup beans, ½ cup farro mixture, ¼ apple, .5oz cheese and .25oz pecans.
  5. Drizzle with 2 tbsp dressing
